What is the difference between Ultrasonically Welded and Stitched straps

When a strap is ultrasonically welded, it means that the strap was heat sealed around the hardware.
When a strap is stitched, it means that the hardware is stitched around the strap. The Stitching also adds on to the look for the watch.
